ARTHUR E. BRYAN, III

Mr. Bryan has managed a farm, run a trap range, worked for a law firm and at the Board of Trade and was a public auditor among other endeavors, but the Hospitality Industry has always drawn him back. His association with bars and restaurants pre-dates his attending college. Establishments/institutions that Mr. Bryan has worked for include Cork ‘n Cleaver, Bennigans, Colgate University, Ala Carte, Lodge Management and The Chicago Chophouse. He has worked in all areas of the front and back of house as well as the kitchen. Responsibilities have included running a college pub, head bartender/ bar trainer, manager, general manager and owner, to name just a few.

The Redhead Piano Bar opened June 10, 1993; Mr. Bryan bought into the establishment in January of 1994 and managed the front of house. In January of 1999, Art and his brother Dan (minority owner) bought the outstanding shares of The Redhead from his partners as well as the building at 16 West Ontario in which the club resides.

Once Mr. Bryan became majority owner, he was in a position to make the club more profitable and efficient. From 1999 through 2007 Mr. Bryan oversaw 9 straight years of growth. In 2008 there was a 3.6% drop in sales due to the effects of Illinois’ smoking ban as well as the downturn in the economy. Over the decade (1999-2008), which included this single down year, Mr. Bryan successfully increased sales by over 60%, branded The Redhead name and ensured that The Redhead achieved an iconic status in Chicago.

Since 2008 The Redhead has seen solid sales growth, and along with necessary cost-cutting, increased profitability. A new addition will be unveiled in early 2013 as well as an expanded legal smoking area on the adjacent property purchased in 2008.

Mr. Bryan received his B.A. from Colgate University and a Post-Baccalaureate Certificate in Accounting from Northwestern University. He is very involved in the River North Business Association; he is in the Executive Committee since 2003, as well as Board of Directors since 2001. He is also active with the Greater North Michigan Avenue Association (Board of Directors), Chicago Hospitality Resource Partnership (Co-Founder/Treasurer), Chicago Alternative Policing Strategy, Chicago Chamber of Commerce, Chicago Convention and Tourism Bureau.
